Red Wine Jelly

The red wine jelly goes perfectly with red meats and pecorino cheese aged 5 months. During cooking, the wine expresses all its fruity nature mark the blackberry and the cherry which complement the rest of the taste, neither sweet nor bitter. Very good on lard on a slice of toasted bread.
